Ever since I started the Mathew Blades Meal Plan Challenge for the next 60 days, I made it my mission to spice up the shopping list Mathew gave me. Literally.

So, I decided to make homemade salsa. All from scratch. And it is DELICIOUS!

So, before we start, I made sure ALL items have the Mathew Stamp of Approved.

10 Roma tomatoes

4 green tomatoes

4 DRIED Chile de Arbol (I buy these in the spice section and they come in a small package. The brand I use is "TAMPICO")

2 FRESH Habanero Peppers (I used the yellow ones)

2 FRESH large jalapenos

1 bundle of Cilantro

3 cloves of garlic

1 bundle of GREEN onions.

Household Blender

-Get a Large Pot, fill with water, start to boil

-Wash all produce

Put red and green tomatoes, Chile de Arbol, habanero peppers and Jalapenos all in pot.

Allow vegetables to boil to the point where you can stick your fork in it and it will slide through smoothly. (around 15 min depending on stove)

While veggies are boiling..

Peel 3 garlic cloves

Remove the leaves from cilantro (DO NOT USE branches)

Cut up the green onions. (the only portion of the onion you will use is the white and the little bit of green. Cut off the root and the very green part and DO NOT USE)

Set these three items aside. Back to Veggies.

When veggies are boiled, start with the smaller items.

Put all peppers in blender (remove stems). and use the pulse setting until it's nicely blended

Next add cilantro, garlic, onions and blend nicely.

Next add green tomatoes. (Make sure to take leaves off around edges)

repeat pulse instructions

Finally add the roma tomatoes and this is where you put it on the blend setting and blend to your liking. I like my salsa smooth so I can put it on top of food and not just for dipping but that is your choice.

FINAL STEP: Salt to liking. (There will be a lot of taste testing since you are salting to your liking but I am sure that won't be a problem ;)

Couple of Notes: This recipe makes ALOT of salsa! But better for sharing :)

ALSO, it is VERRRYYY SPICY!! So you can take out one habanero/jalapeno pepper to make it less spicy.

I hope you enjoy and please ask any questions you may have!
